03 — Venison

The red deer
of Elston.

Red deer graze this farm alongside the cattle — and through the family butchery runs the wild harvest of the South West’s forests. Venison is what Elston is quietly best at.

Our herd

Deer among the trees.

Since 2020, Elston has run red deer on its permanent pasture — the same regenerative ground as the cattle, soon to graze between the maturing silvopasture rows. Farmed deer from Elston and wild deer from the region's woods and estates move through one professional game larder at the farm, inspected and butchered by our own team.

M C Kelly is the West Country's leading game supplier and partner for Forestry England wild venison across the South West — roe, fallow and red taken responsibly from the nation's forests using lead-free ammunition.

The larder

Whole-carcass butchery

Loin, haunch, diced, mince, sausages or the whole animal — cut to a kitchen's exact specification in our FSA-licensed game rooms.

Wild & farmed, one standard

Wild venison from managed forests and estates; farmed venison from Elston's own herd. Same larder, same inspection, same traceability.

Year-round supply

Venison runs the whole year across species and sources — wild through the seasons, farmed to fill the gaps, so a menu never has to come off.

Low in fat, high in iron, taken from landscapes that need the graze managed — venison is the most honest red meat Britain produces. If you cook professionally and want it on your menu, talk to the larder.
